"I've been buying and loving Tiger Nuts for a few years now, ever since I discovered the brilliance of them when I found them for sale online. I keep buying them for simple healthy snacking right out of the package, and I buy the flour to use in place of high glycemic load wheat and gluten free flour mixes that have rice, sorghum, millet, tapioca, and potato starches.
What tiger nut flour has done for my family is create our favorite weekly batch of pumpkin spice muffins, which we use as our quick, running-out-the-door healthy mini breakfast to go. Seriously!
